These are cheesy, spicy, flavourful toast pizzas that are super easy to make and a treat to eat!
Paneer is one of my absolute favourite foods and it’s so versatile in terms of how it can be cooked. I was watching a video and the dish they were making were pizza toasts, which really stood out to me given how easy they are to make and how much flavour we can punch into them.
I also really love pizza but it can be quite time consuming making the dough, letting it rest and then rolling it out. Using bread is a great alternative and makes for a quicker dish to enjoy!
Frying the paneer with a couple of spices beforehand means that the paneer is cooked well by the time you eat the pizza toast and there’s also a good amount of flavour with every cube too. I’ve added cherry tomatoes, capsicum and red onion as I feel the texture of these veggies (crunch of the capsicum & onion and moisture in the tomato) and their flavour really brings the pizza toast together. But you can use the veggies that you have on hand and play around to figure out what you like best.
Ingredients
2 tbl vegetable oil
250 g Paneer, chopped into medium-small pieces
1 tsp Garam Masala Powder
1 tsp Kashmiri Chilli Powder
1 tsp Coriander Powder
¼ Cup Passata Sauce
1 tbl Chilli Flakes
1 tbl dried basil
1 tbl dried oregano
6 slices of bread
1/2 small red onion
¼ Cup Cherry Tomatoes
½ Green Capsicum
½ Cup Shredded Cheese
Salt to taste
Method
- Preheat the oven to 175 degrees Celsius.
- In a fry pan on medium heat, add the vegetable oil.
- Once the oil is hot, add the paneer.
- Leave the paneer on that side for 30 seconds and then flip to the other side.
- After a minute add the garam masala, Kashmiri chilli powder and coriander powder. Stir through.
- Continue cooking, flipping regularly until the paneer is golden brown and then remove from heat.
- To make the sauce, in a small bowl add the passata sauce, dried basil leaves and salt to taste. Mix well.
- Chop the cherry tomatoes in half, the capsicum in thin slices and onion into fine pieces.
- Lightly toast each slice of bread, just for half a minute until slightly crispy.
- Cut each toast piece in half diagonally. So you have two triangle pieces.
- On each slice spread about 1tbl of the sauce, add paneer pieces and the vegetables to your preference. Top with shredded cheese.
- Add the slices to a baking tray lined with baking paper.
- Place in the oven for 10 minutes until the cheese has melted and is golden brown.
- Serve immediately.
