Pull apart bread with a spicy, cheesy twist!
We start with a scored loaf of bread that is brought to life with butter, garlic, capsicum, onion, cheddar, and paneer. It’s baked until the cheese has melted and the top is golden brown. Tasty, satisfying and irresistible – it’ll soon become a well-loved staple!
Pull apart breads are one of my favourite dishes to share with friends and family. It’s perfect for entertaining, perfect for a snack and perfectly satisfying. Easy to make with a boost of flavour, this will soon become a favourite.
Ingredients
- 1 Cobb Loaf
- 1 tbsp Vegetable Oil
- ½ Red Capsicum, finely chopped
- 125 g Paneer, crumbled or finely chopped
- 1 tsp Garam Masala Powder
- 1 tsp Kashmiri Chilli Powder
- 1 tsp Coriander Powder
- 2/3 Cup Mozzarella grated
- ½ cup Cheddar cheese, grated
- ½ Red Onion, finely chopped
- 2 tsp chilli flakes
- 100 g Butter, melted
- 2 tbs fresh parsley, finely chopped
Method
1. Preheat the oven to 175⁰C.
2. In a small fry pan on medium/high heat add the tablespoon of oil.
3. Once the oil is hot, add the capsicum and sauté until softened, stirring regularly. About 3 minutes.
4. Then add the paneer, sautéing until golden.
5. After a minute add the garam masala, Kashmiri chilli powder and coriander powder. Stir through.
6. Sautee for about 2 minutes until all cooked and then remove from heat.
7. Set aside. Once cool add the mozzarella and red onion.
8. In a small bowl combine the butter, parsley and chilli flakes. Season to taste.
9. Cut the bread into diamonds that have about 2cm sized sides. Don’t cut all the way through, cut about 2 /3 of the way towards the bottom.
10. Dip a brush into the butter / chilli / parsley mix and spread this through all of the cracks in the bread.
11. Using a spoon to open each of the cuts, add the paneer mix into each of the cracks. Fill up to 0.5cm from the top of the loaf and push the edges of the loaf inwards from time to time to ensure the bread loaf keeps its shape.
12. Brush the loaf with the remaining butter and top with the grated cheddar cheese.
13. Wrap the loaf in foil and place on a baking tray. Put this in the oven for 15 minutes.
14. Remove the foil and bake the loaf for a further 5 minutes so that the top of the loaf is crunchy.
15. Serve immediately and enjoy!
